# Ingredients list:

→ Vegetables & Fruit

01 - 14 oz white cabbage, finely shredded
02 - 1 large carrot, peeled and grated
03 - 1 large apple, cored and grated
04 - 2 spring onions, finely sliced

→ Dressing

05 - 3.5 oz Greek yogurt
06 - 2 tbsp mayonnaise
07 - 2 tsp Dijon mustard
08 - 1 tbsp apple cider vinegar
09 - 1 tsp honey
10 - Salt and freshly ground black pepper, to taste

→ Optional Additions

11 - 2 tbsp chopped fresh parsley
12 - 1 tbsp lemon juice

# Steps:

01 - Combine shredded cabbage, grated carrot, grated apple, and spring onions in a large mixing bowl. Toss apple with lemon juice before adding to prevent browning if desired.
02 - Whisk together Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and pepper in a small bowl until smooth and fully combined.
03 - Pour dressing over vegetable mixture. Toss thoroughly to coat all ingredients evenly with the creamy dressing.
04 - Taste salad and adjust salt and pepper as needed. Fold in chopped parsley if using.
05 - Refrigerate for at least 15 minutes to allow flavors to meld. Serve chilled.

# Expert Tips:

01 -
  • The apple adds this incredible fresh sweetness that balances perfectly with the tangy dressing
  • It comes together in literally 20 minutes and actually tastes better the next day
02 -
  • Squeeze as much liquid as possible from the grated apple before adding it, or your slaw will end up watery
  • The cabbage needs to sit in the dressing for at least 15 minutes to soften slightly and absorb the flavors
03 -
  • Use a box grater for the apple rather than a food processor to keep some texture
  • If making ahead, keep the dressing separate and toss just before serving to maintain crunch
