# Steps:
01 - Place bread slices in toaster or under broiler until golden brown and crisp on both sides.
02 - Halve the avocado lengthwise, remove the pit, and scoop the flesh into a small mixing bowl.
03 - Add lemon juice, sea salt, black pepper, and chili flakes if using. Mash with a fork until mostly smooth with small chunks remaining.
04 - If adding eggs, heat a frying pan over medium heat. Poach or fry eggs until whites are set and yolks reach desired doneness.
05 - Divide mashed avocado evenly between the two toasted bread slices, spreading to the edges.
06 - Top each toast with a cooked egg if using. Drizzle with olive oil and sprinkle with fresh chives or cilantro. Serve immediately while bread is still warm.
